The core oven is made from natural terracotta clay. They clay is rolled by hand over a period of days, allowing each layer to harden before applying the next one, to prevent the dome walls will cave in. The clay shell is then fired in a huge brick oven to attain heat strength and an unmistakable terracotta colour. Afterwards a variety insulation is applied to the oven: leca (Portuguese for expanded clay, i.e. clay heated to the point when it forms little rounds), refractory cement, and ceramic fibre blankets (rockwool). The dome is reinforced with a steel mesh and a brick arch with chimney are added. The final touch is a layer of cork which serves to water-proof the oven, add colour, and hide potential micro cracks. The result is a raging hot oven on the inside while only slightly warm on the inside. The heat also remains in the oven overnight, and can still be at 400F the next day, depending on the environment.
It can be raging hot on the inside and you can still comfortably hold your hand on the outside. The chimney is stainless steel. Lifting eyes on the corners are removable. Like any brick or clay oven this oven will also have its share of small cracks, both inside and outside. You can patch them with different high temperature materials like fire clay or fireplace mortar or just leave them as is. Unlike some ovens where the temperature gauges are on the doors (which are generally useless because the door is open most of the time), this one is inserted in the heart of the oven and therefore always monitors the internal temperature. Like any brick or clay oven, prior to the first use the oven needs to be "cured" which means running a few small fires a few hours each; it's a very simple but necessary step designed to eliminate all moisture from the cement covering the oven.
We also provide you with a full set of instructions that show you how to build the fire and light it - with many tips and techniques. There is also a guide on what wood is best to use along with some great recipes.
As the ovens are made to order - delivery will take approximately 2 weeks. WE WILL HOWEVER KEEP YOU INFORMED AT ALL STAGES.

Heat retention is amazing. Pizzas etc are restaurant standard in terms of crispness and flavour.
I would also like to thank Kevin for his superb help/guidance and will recommend the Pizza Oven Shop to as many friends/colleagues as I can.
